One of my favorite cookies around the holidays are Christmas Crinkle Cookies. I discovered these while in college when trying out new recipes for a cookie exchange and they are amazing and really easy to make. They are loaded with chocolate and instantly melt in your mouth. I used the recipe from AllRecipes.com, but it’s not gluten free so I put the recipe away for a few years.
After going gluten free two years ago, I figured this was one cookie I would have to give up, but Gluten Free On a Shoestring came up with an awesome recipe that is easy and doesn’t contain a million ingredients. The original recipe I used contained nine ingredients and the gluten free version contains 12 ingredients, but nothing that isn’t “normal” with gluten free cooking. The two ingredients that ensure this recipe is gluten free are all purpose gluten free flour and xanthan gum for texture. I highly recommend using Bob’s Red Mill One-to-One Baking Flour, which already contains xanthan gum, so that’s one less ingredient to purchase.
